Costa Grown

Here in Costa Rica, the produce is abundant.  The fastest and most affordable way to gather your produce is to visit the produce truck or local organic farmers market.  The produce truck normally visits the local beach, Playa Guiones twice a week delivering the local grinds to the people.  With the local fruits and vegetables, I have been creating a variety of meals. The outcome is always a surprise, especially to me.

An avocado obsession continues......

When traveling, it takes time to adapt to new surroundings. For some, the difficulty in adapting  comes with a different climate, career, culture, and even food.  Most of the places I choose to visit are abundant in things I love to be around such as avocados, coconut, papayas, ocean, sunshine, moonshine, love, and yoga!  I’m thankful that all of those are here in Costa Rica.

Veggie Truck Run!

I still face challenges as a raw foodist.  I do not feel challenged with the temptation of eating cooked food.  My challenges are more in creating variety in my meals.  I brought with me a suitcase full of superfoods, supplements, organic spices, and my VitaMix!  With my “traveling pantry” and my local produce, I have been able to create a variety of meals to satisfy my cravings.

Vitamineral greens, Vitamin C, Enzymes, Probiotics, Tahini, Bali Cacao Beans, and a ton of spices!

Yummy nori avocado wraps!

My favorite treat! Spirulina Cauliflower Popcorn

Faux Tuna Salad w/ salad and beet, carrot chips.

Curried Carrot/Beet Salad inside lettuce shells!

Live chili over a bed of greens w/ sunflower seed sour cream and avocados galore!

I’m looking forward to see what other Costa creations will be coming out of my VitaMix and on to my plate….enjoy!
