I’m a huge fan of kelp noodles! I’m not only a fan because of their amazing texture, boyancy, and versatility, but because of their amazing health benefits too! Eating organic, raw food has assisted tremendously in keeping my body healthy and pure. Therefore, I find it important to learn about the foods I’m taking in, what nutrition they provide, and their healing properties! Kelp and various forms of seaweed are known for being rich in nutrients. Kelp is the best natural form of trace minerals that you can find, providing salt, protein, iodine, and iron.
My friends and I decided to make a pad thai dish. Every experience I’ve had with raw pad thai has been an amazing experience, so I thought I’d give it a try. Roomie Tanya and I joined forces in the kitchen to create an amazing array of ingredients, such as a lovely base sauce for our kelp/zucchini noodle pad thai dish. We marinated mung bean sprouts, sea asparagus, shitaki mushrooms, to be used for generous ganishes. The boys assisted by grading ginger and garlic and slicing asparagus and red pepper to add to the mix. After numerous taste tests, it was fabulous. It was flavored differently than any other pad thai dish I’ve tried. A beautiful spicy, almond. coconut sauce flavored the dish beautifully. We also served a Curry Tomato Coconut Soup w/ basil and green onion garnish to go along w/ the dish.
The dinner was wonderful, flavorful and fun to create. It doesn’t get much better than sharing quality time in the kitchen, making beautiful dishes with the ones I love.
